Sticky Condensed Milk and Vanilla Seed Icing

In my opinion condensed milk is just about the best thing that comes out of a can. If you need some to disappear I'm the person you should go to... So when Marisa from The Creative Pot tweeted about condensed milk cupcakes the cogs started rolling and I came up with this icing. Let me tell you, if you don't like sweet things you should stay away from this icing, it's sticky and sweet with the creamy taste of condensed milk and the light taste of vanilla to break the hold that the sugar has on you. The icing sets to a beautiful silky matt covering with the vanilla seeds dotted throughout the surface.

I built my own light box last night so that I could take proper photos. It was actually quite easy to make, I found the instructions here, I used tissue paper for the diffusing material instead of fabric. Just need to get myself a stronger light than my bedlamp!

Condensed Milk and Vanilla Seed Icing
Enough for approximately 10 cupcakes

  • 250g Icing Sugar
  • 70g Butter
  • 100ml Condensed Milk
  • Seeds of one Vanilla Pod

  1. Mix together the butter and condensed milk.
  2. Beat in the icing sugar.
  3. Add the seeds and mix well.

I heated the icing a little bit before piping it on the cupcakes. It spreads quite a bit so there is no making impressive icing towers with this one.

  1. Thanks for the great tip re creating a light box. I've really been struggling to take decent pics in the evening. Just got a new camera so am quite psyched.
I don't have much of a sweet tooth, but I love vanilla, and I love condensed milk - so this cupcake has my name on it!

  2. These look exactly like how I imagined them! Great realisation of a concept - YUM.

  3. Oooh, new camera! As soon as I start earning money I'm also buying myself a decent camera. The light box works realy great for taking photos at any time, I made mine with an empty paper box without any problem. Have fun playing with the new camera!

  4. Thanks Marisa! They taste even better than they look...

  5. usually the condensed milk goes straight from the can into my mouth (it's my only vice... that and eating hunks of cheese from the packet). But this I will try baking with 9-year-old! lovely

  6. what a brilliant idea with the light box. This is definitely the answer.. With it being so dark so early at the moment and not having professional lights, its the solution to my problems Thanks so very much for the tip !

  7. Forage - Condensed milk usualy follows the same route with me :P Be warned, there is probably going to be some sticky fingers with this recipe!

Gaby866 - Building a light box is definitely worth it, it's very easy and it makes your food look so pretty! I made mine with an empty paper box last night just to photograph the icing :D

  8. I never thought about using a light box!! Thanks for that tip!! :)
The icing sounds really sweet! Just the way I like it! haha
Would you mind checking out my blog? :D

  10. Just beautiful! Such an elegant cupcake.
